I am a big fan of food that can be cooked and prepared under an hour. And for a part-time working mom like me, I am always on the lookout for easy recipes.
In the hopes to at least go back to Manila with some knowledge of Vietnamese cuisine under my belt, I bought Homestyle Vietnamese Cooking. And one of the dishes that I love cooking is Stir-Fried Garlic Prawns which can be prepared and cooked in 47 minutes. And best of all, it doesn’t have too much ingredients. 😛
Just marinate 700g of fresh large prawns, peeled and de-veined in 2 teaspoons minced garlic, 1 teaspoon of fish sauce and 1/4 teaspoon of salt for 30 minutes.
Heat 3 tablespoons of oil (I use extra virgin olive oil) in a wok over high heat. Add the prawns and stir-fry for 2-3 minutes. Set aside.
Reheat the remaining oil in the wok and stir-fry for 1-2 minutes 4 cloves of minced garlic and 1-2 finger length deseeded and minced chillies. Add 1 tablespoon of oyster sauce.
Now spoon the mixture over the prawns and serve.
Quick, easy, and yummy!
